Sue’s Kitchen – Basil & Cashew Pesto

Here’s how I made it:

  • 1 cup Fresh Basil tightly packed
  • ¼ cup grated parmesan cheese
  • ½ cup roasted cashews (I had some in a packet already roasted and salted)
  • 4 cloves garlic
  • 2 ½ Tbsp Dirty International Olive Brine (I do like it Dirty so if you want to pare it back then put 1Tbsp and see how you go)
  • 1/3 cup Olive Oil

 

Put everything except for the oil into your blitzing machine and blend to a paste.

Add the oil while the motor is running.

Season to taste

 

Use it in:

  • Pasta with a bit of Best Foods Mayonnaise, topped with grated parmesan, sundried tomatoes, and fresh basil
  • Pizza as the base with some tomatoes and mozzarella for a yummy Margherita Pizza
  • Spread on a sandwich with a bit of chicken and tomato
  • On top of a baked potato with sour cream for a quick lunch
  • Drizzled in a Caprese Salad (my absolute favourite!)
  • Spread some on a chicken breast (seared on both sides), top with caramelised red onion and crumbled feta cheese,  and cook in your air fryer (or an oven if you don’t have one) until the breast is cooked through
  • Spread on a perfectly cooked steak
  • Cheese and pesto toasted sandwich
