Pear, Ginger & Olive Brine Muffins

These are the perfect match for your afternoon cuppa. The crystalised ginger takes me back to my Nana, so it's only fitting to use the good china, however, if you are not a fan of ginger, leave it out.

Sue’s Kitchen – Basil & Cashew Pesto

When the kids are hungry and I want something to give them real quick I whip up some spiral pasta (we go through boxes of the stuff) and chuck a little bit of mayo with pesto in it. Ten minutes you’ve got happy kids with minimal stress. It elevated the flavour to the next level and I think it is pretty close to the original 90’s spread. It is now a constant in my fridge and it keeps as long as the cream cheese does (if it lasts that long!).
