This additonal of a bold walnut salsa brings another dimnesion to the classic winter warmer soups. It's a breeze to make, with minimum fuss.

Ingredients

3/4 cup Walnuts, toasted
1 small clove of garlic
1/2 tsp thyme leaves, finely chopped
2 tsp apple cider vinegar
3 Tbsp olive oil
1 Tbsp Dirty International Olive Brine

Method

Place the walnuts, garlic, vinegar and thyme in a small blender and pulse to a coarse paste. Season with a little salt and add the oil and brine to loosen.

Dollop a spoonful over your soup to serve, or place in a dish for your platters.
