4 medium tomatoes, deseeded
½ red onion finely diced
2 chillies (less or more to taste)
Juice of one lime
2 tbsp Dirty olive brine
½ cup chopped coriander
Pinch of dried oregano
Pinch dried cumin
Salt and pepper to taste.
1. Dice tomatoes, onion, chillies
2. Mix together all ingredients with the exception of the Dirty brine.
3. Add Dirty olive brine, taste, season, taste.
Refrigerate for an hour and serve
Tip – if you choose to remove the chilli seeds – keep a few aside and add to up the heat level.
