1 x Onion sliced
3-4 Cloves of garlic
2 x Carrots diced
1 x Leek sliced
A good slug of red wine
1/4 cup of Dirty Int Olive brine
2 tbsp Balsamic vinegar
2 cups of veggie or chicken stock
2 x bay leaves
1.5kg of roast beef
Salt , freshly ground black pepper
Put everything in a large pot cook slowly at 150 degrees on fan bake for 5- 6 hours, until meat pulls apart.
Serve with your favourite winter mash – (we use parsnip & potatoes)
Garnish with fresh Italian parsely.
